Thanksgiving Day Pie Recipe

Yesterday, I made two cheescake pecan pies for this evening's Thanksgiving dinner. This is hands-down my favourite holiday pie. It's scrumptious, you can mix everything in the same bowl, and it's fun to make because the three layers magically rearrange themselves while baking. Funny thing is, I don't particularly like either cheesecake or pecan pie, but the two combined are magnificient.



Cheesecake Pecan Pie
Makes 1 pie. Double the recipe for 2 pies. Freezes well.

Beat together
1 egg
1 package cream cheese (250 g)
1/4 c. sugar
1 tsp. vanilla
Pour into 1 frozen pie shell. Sprinkle with chopped pecans.

Beat together (you can use the same bowl)
2 eggs
1/2 c. corn syrup
1/4 c. brown sugar
Pour over pie.

Bake at 425F for 5-10 minutes, reduce to 375F for 20-30 minutes, or until top is set. Cool before slicing.
